The Kaffeewerkstatt Salzburg by Simon & Rafael Schärf produces at the kaffeewunder.com site in Saalfelden.

There are 15 different coffee blends in two roast levels, 5 of our coffees are 100% ORGANIC, while three are Fairtrade and organic certified.

Under the watchful eyes of Simon and his team (Manuel & Lukas), who are responsible for coffee quality and the entire production process, each bean is refined by hand with the utmost care and patience.

The result is unique depending on the composition and combines pleasure with sustainability.

Roasting Process

With our modern roasting control and sensor technology, we can measure the temperature of the beans inside the roaster and thus specifically delay the roasting point or the development phase after the "first crack."

This gentle and very slow roasting process ensures that the beans are not roasted too hot, the aromas do not evaporate, and the individual natural taste, shaped by the respective growing regions, is preserved.

All our coffees are roasted using 100% Arabica in a blending-after roasting (single-variety) process, to a medium (balanced) or dark (intense) roast. We produce 1- to 4-bean blends.

The result is a very digestible coffee with few bitter substances and a natural coffee aroma.

Our storage capacities enable us to purchase entire harvests, ensuring consistent, high quality and stable prices – a significant quality advantage over micro-roasters.

With our current capacity of approximately 65 tons per year, we are the perfect size as a coffee roastery to sustainably produce top quality at affordable prices.

Green coffee/Raw material

The entire, and highly important, green coffee trade and purchasing is also handled by the Kaffeewerkstatt team itself.

Our top green coffees are sourced from specialty dealers, meaning we are not dependent on wholesalers and already comply with the EU Supply Chain Act.

Our efforts to promote sustainability extend throughout the entire procurement process.

We are proud to hold organic and fair trade certifications, and our coffee comes from renowned specialty traders who supply the highest quality raw materials. This is an important step to improve the quality and social standards in coffee production, but we are aware that this alone is not enough to overcome the challenges mentioned above.
